Me: What do you want for lunch?
Hubby: Just salad and some leftover soup.
As I "tucked" him in to bed I let him know that tomorrow I'll be home late. Not that we check in but that's my polite way of letting him know he's on his own for dinner. And being the great communicator that he is, he finally decides to tell me about his busy schedule tomorrow... as we're saying goodnight!
The schedule. Rise and shine at 3 a.m. for secrete squirrel business, court, and then Go-Go-Gadget action 'till the bad guys decide it's time for my husband to go home safe to his wife. I'll be lucky if he comes home by midnight. Ha! Soup & salad's all he asked for!

- Green smoothie for breakfast
- Three hard-boiled eggs minus two yolks
- Kale-lentil-&-bacon soup with veggies
- Salad with lots of greens and other colorful veggies
- Apple with his favorite peanut butter
- Tiny bag of Cheetos
- Sliced cucumbers with lemon and a bit of salt
- Strawberries
- Three turkey patties with mustard dip
- Black beans with avocado and tomatillo salsa
- Dried fruit
And that, my friends, is what's for lunch.
NOTE: Packing lunches for a cop is a tricky thing. You have to consider that there may or may not be a microwave, there is rarely a fridge, and never a complete lunch break. You get a call, you go! Regardless of the hunger pains kicking in. Take a bite and go! If I pack an orange I have to peel it and break apart the pieces. He can't go smelling like orange peel with sticky fingers while looking spiffy in that uniform now. The shift may be a normal 8-12 hours or it may go for 24+ hours. Do you pack for 8 hours? Do you pack for 24? The list of ifs and buts goes on.
My thoughts as I packed his food. I hope he doesn't get hungry. I hope it fits in his lunch box cooler. He's gonna want more peanut butter. Is this lunch? Or is this breakfast, lunch, AND dinner? I'm tired.
No one ever told me packing lunches would be so stressful!!!
